Notes of citrus tart, raw almonds and custard

This small batch, organic oolong tea comes from the same family that has been crafting teas for six generations on the outskirts of Dharamshala. Located at the foothills of the Himalayas at 1400m, the location of the garden presents some very panoramic views of the snow capped mountain range and freshly clean, surrounding forests. With vast knowledge and experience in applying traditional crafting methods to new tea varieties; every year, our teamakers set aside a small quantity of this tea for sale fresh and the rest for aging.
It was picked in late March 2017; lightly-oxidized, rolled and baked at low temperatures for a week to preserve the tea's aromatic compounds and character notes that bring to mind the smoothness of silk. The aging process further enhances its citrus-like tartness, underlying raw almond note with added viscosity and creaminess of custard.
We highly recommend brewing this tea under higher temperatures for longer steeping times; which as a result will yield more sweetness and viscosity.
