White Tea from the Nilgiri Hills, India / Harvested in April 2024 / Organic
After experimenting with processes, timings, and temperatures using small-scale machinery from China, our teamaker masterfully creates a white tea composed of large, beautifully dried leaves, buds and twigs. High in the Nilgiri Hills outside the Coonoor region, the leaves are plucked for a few weeks in April, then withered and naturally dried with minimal oxidation over a 25 hour period. Due to minimal processing, the tea contains plenty of the plants natural antioxidants and preserves its natural fresh flavors.
White Peony or 'Baimudan' in Chinese, is a white tea that consists of a blend of buds and leaves. Given Nilgiri's terroir - coastal, yet protected by a single range of mountains - creates a cool and clean environment for tea to thrive. Being cultivated around a rich floral habitat produces a tea with a refreshingly zesty finish and honey-like viscosity.Â
Our White Peony comes from the same organic producer who crafts our Dragonwell. This delicate tea is a deviation from standard Nilgiri teas which are well known for dark, aromatic and flavor rich brews. By using the Assamese varietal, natural climate and soil emerges a pure tea with herbaceous, nutty and lingering sweet notes of lemon verbena, green chestnuts and cucumber.
