Notes of juniper berries, pineapples and pine
GreenTea from Assam, India / Harvested inJuly 2019/ Organic
Green Pearlis made from the large Assamese leaf variety indigenous tothe region. The unique cultivar, terroir, and craftsmanship of this tea produces aclean, light-tasting brew with pronounced fruit and earthy notes with a touch of astringency. The subtletyof this teaexpresses itself over the course of many infusions ranging from bright and invigorating to mellow and soft.
Our teamakerhand-picked from select tea bushes with high chlorophyll content and valuable antioxidants. Processing involves cool withering indoors for approximately 15 hours under constant airflow. This ensures even oxidation without significant discoloration or leaf damage. By hand, the leaves are pan-roastedto intensify the cultivar’s unique fruit andearthynotes and gently rolled into tight pearls. During steeping, they beautifully unfurl to their full leaves releasing complex tastes with a green, mild infusion.
The higher elevation of this garden means the harvest is later to sprout, and sprouts more sporadically than lower elevation gardens.Because of this, our method for selecting this tea is typically made before the onset of themonsoon season. This ensures that we select the ones that best combines the aromatic and taste properties that we look for in our teas.
