From an area unfit for growing tea, the state of Bihar has emerged for producing high quality teas that rival some of the more popular regions in India. Hand-picked from an organic, small tea garden in mid-August 2023, this tea was grown at 300m above sea level and specially made on humid days. Only mature leaves planted with the Assamica varietals, TV22 and TV26, were plucked for this tea.
Once picked, the tea-maker first withers the leaves outdoors, breaks the leaf structures through gentle bruising for six hours. This maceration promotes oxidation and releases some of the leaf juices. Thereafter, the tea leaves undergo four days of low temperature roasting.Â
The resulting tea is complex, with long, dark, wiry leaves including a peculiar sheen effect reminiscent of tempered chocolate. It brews with clarity, sweetness and decadence, as its namesake; producing notes of dark chocolate, malt, and hint of cedar wood.Â
